A review of research, performed by NIZO Food Research and published in the Journal of Agricultural and Food Chemistry, examined all studies done to date and concluded that "The application of aroma in food product development for inducing satiation is promising and appealing." One method that can help with weight management is satiety, or a feeling of fullness. If you feel full, you lessen your food intake and will ideally lose weight. Researchers were able to increase satiation by altering the amount of retronasal aroma released using organic acids derived through fermentation. Retronasal aroma release occurs during food ingestion and its increase can have an immediately noticeable effect, said Rianne Ruijschop from NIZO Food Research. "Although the extent of retronasal aroma release appears to be subject specific, food product properties can be tailored in such a way that these can lead to a higher quality and/or quantity of retronasal aroma stimulation." Unfortunately, don't expect to find products on your shelves that say "Now with more full-feeling aromas" just yet. While the research is promising and the concept is sound, the reality still appears to be at least several years away: "The next challenge is to implement these concepts into real food products," the researchers concluded. |
